Preservation of Shellfish Undulate Venus (<i>Paphia undulate</i>) by Canning with Different Treatments

Our study investigated preservation Undulate venus (Paphia undulate) by canning via three treatments that are canned raw, smoked and cooked as a healthy product with high nutritional value. Results reported that edible meat of Paphia undulate was free from Cu, Pb Cd result washing process. There was significantly (p undulate, there significantly reduction protein content compared with the raw. Significant different was canned raw , the three shellfish had significant difference showed lowest value pH. All were rich in minerals where treatment higher Ca, Fe, Zn, Mg, Mn. While had lower than raw. Lightness (L*) slightly between all undulate. Reduction on lightness redness noticed at same time all treatments highest (L*), (a*). Canned the highest hardness followed then cook. Slightly significant red smoked, degree cooked was excellent.
